The OzHarvest Cookbook

OzHarvest is launching its first ever cookbook featuring 'food rescue' recipes from 44 of the country's most celebrated chefs, which can also potentially save you hundreds of dollars in grocery bills.

The OzHarvest Cookbook uncovers our top chefs' secrets for using leftovers and is a who's who of the Australian cooking scene including Maggie Beer, George Calombaris, Peter Gilmore, Bill Granger and Neil Perry.

All proceeds from the book will go to OzHarvest, a not for profit organisation that redistributes excess food to more than 380 charities across Australia.

Lovingly photographed by top food photographer Alan Benson, this hardcover 320-page cookbook is a can't-live-without collection of over 120 recipes dedicated to converting leftovers and past-it-looking produce into gastronomic masterpieces or simply great meals for all the family.

Just because your veg maybe bendy and blemished, doesn't mean it doesn't taste great! So, how about turning last night's lamb roast into lamb and olive ladies' fingers with beetroot tzatziki (George Calombaris), or saving the ham hock for garlic custards with ham juices and peas (Peter Gilmore), and using gluggy rice for Christine Manfield's mushroom arancini? And of course, there's no better use of leftover egg whites than Bill Granger's gooey pavlova with strawberries and honey.

Not only is this book full of fabulous, mouth-watering recipes, it also has the ability to be a lifestyle changer. As well as reducing waste it could potentially save you hundreds of dollars every year in grocery bills.

Each year, $7.8 billion* dollars of food is thrown out and over four tonnes ends up as landfill. And in any one night, one in ten people go without a decent meal. OzHarvest is the conduit that links the two, picking up leftover food that would otherwise been thrown out and delivering it to those who need it.

Founder and CEO of OzHarvest, Ronni Kahn, was instrumental in bringing the cookbook together and says it is a natural extension of what OzHarvest does every day.
