This tzatziki dip is an easy use it up recipe that transforms extra yogurt and leftover veggies into a cool, refreshing dip that’s perfect for snacking. It’s ideal for when you have yogurt nearing its use-by date or vegetables that need eating, and you need a clever way to avoid food waste. It’s so easy to mix yogurt with cucumber, lemon, and olive oil into a creamy dip. This dip works perfectly with veggie sticks or crackers! This recipe is also endlessly flexible, as you can swap the cucumber for zucchini, use whatever vegetables you have for dipping and add garlic or herbs for extra flavour. Need

1/2 cup of yogurt
1/2 cucumber
1 tsp lemon juice
1 tsp olive oil
Any veggies to serve (we’ve used carrot, cucumber and celery)
Salt & pepper

How

  1. Finely dice the cucumber.
  2. Place cucumber in a bowl with yogurt, salt, pepper, lemon juice and olive oil in a bowl. Mix well.
  3. Slice carrot, cucumber and celery into sticks.
  4. Enjoy!
