Bread Crunch

This simple bread crunch is an easy use it up recipe that transforms old bread into a crispy, garlicky topping for pasta, salad and more. It’s perfect for when you have stale bread and need a clever way to avoid food waste. It’s so easy to blitz leftover bread into golden crumbs with garlic, herbs, and lemon zest that becomes a pantry staple that adds texture and bite to just about anything! This recipe is also endlessly flexible as you can swap the garlic for chilli flakes and use whatever herbs you have like parsley or thyme. So, when your bread needs using, give this simple bread crunch a try!

Need

Bread
2 garlic cloves
1 lemon’s zest
1 tbsp olive oil
Any herbs (we’ve used rosemary, thyme and parsley)
Salt & pepper

How

  1. Process your stale bread in a food processor until it forms fine crumbs.
  2. Mince garlic cloves and zest one lemon. Finely chop your herbs. Keep hard & soft herbs separate.
  3. Heat olive oil in a pan over medium heat then add breadcrumbs and cook until lightly golden.
  4. Add the garlic and any hard herbs (like thyme or rosemary), and cook until fragrant.
  5. Turn off the heat, add the lemon zest, soft herbs (like parsley) salt and pepper.

Chef’s Tip: Store in a sealed container at room temperature.
