Bread Dumpling Recipe

These bread dumplings turn leftover bread into golden, cheesy bites that are comforting and filling. Instead of tossing out old bread, re-use it by mixing breadcrumbs with ricotta, parmesan, and garlic to create soft dumplings. Once baked and topped with crispy bacon and melted cheese, they make a satisfying meal or side dish. The addition of sour cream and fresh chives proves that yesterday’s bread can easily become today’s dinner.

Need

5mL vegetable oil
15g butter
½ cup ricotta
90g grated parmesan (1cup)
1 egg
1tsp salt
1 Purple onion
2 cloves garlic
2 cup bread crumbs

To Serve:
2 rashers Bacon
50g/handful tasty cheese
Sour Cream
Chives

How

  1. Pre-heat oven to 180. 
  2. Chop bacon into 1cm squares, cook in vegetable oil until crispy. Remove bacon & set aside. 
  3. In the same pan asauté onion until translucent, add butte crushed garlic & cook for a further 2 minutes (or until garlic is golden & fragrant).
  4. In a mixing bowl add bread crumbs, ricotta, parmesan, salt, egg & cooked onion/garlic & mix well. 
  5. Form mix into (12) golf-ball size balls and spray generously with oil. Cook in over for 15 minutes on 180.  
  6. Remove from oven, cover balls with bacon & cheese & cook for a further 5 minutes. Sprinkle dumplings with freshly chopped chives & serve with sour cream.
