Festive Savoury Muffins

These festive savoury muffins are an easy use it up recipe that turns leftover cheese and Christmas ham into golden bites, perfect for breakfast or snacking. Instead of wondering what to do with those post-holiday leftovers, you can repurpose them by folding them into a simple muffin batter. It’s loaded with spinach, tomatoes, and herbs which makes it a snack for everyone. The versatility of these festive savoury muffins shows that preventing food waste can fuel you well beyond Christmas day.

Need

4 Eggs

110g of oil 

80g cream cheese (or use creamed corn) 

100g cheese, grated 

75 ml milk 

Pinch of salt 

Pinch of cracked pepper 

 1 3/4 cups of self-raising flour 

1/4 tsp bi-carb soda 

3 Tbsp tomatoes, crushed or diced 

1/2 tsp paprika 

1 tsp mixed herbs 

A handful of frozen or fresh baby spinach

200g ham, diced

How

1.Crack eggs into a bowl add oil and beat until light and fluffy. 

2.Add cream cheese and grated cheese to the bowl and mix well. 

3.Add in milk, salt and pepper.

4.Sift in flour, paprika bi-carb soda and mix gently. 

5.Squeeze any excess liquid from the spinach (if frozen) and add spinach, tomatoes, herbs and ham, folding through until just combined. 

6.Portion into muffin trays. 

7.Bake at 175°C for approximately 30 minutes, or until golden and cooked through.
