Fruit Pie

This fruit pie is a quick and simple use it up recipe that turns leftover fruit into a comforting dessert. Ready in under 40 minutes! Instead of tossing those soft fruits, you can repurpose them by topping with puff pastry and a sprinkle of sugar. In a short amount of time, you’ll have a wonderful rustic pie, made from rescued food that would have otherwise been wasted. Best served warm with cream or ice cream for extra sweetness. Need

1 cup of any fruit (we used strawberries and bananas)
1 sheet of puff pastry
1 teaspoon of sugar
A drizzle of cream or scoop of ice cream (optional)

How

  1. Thinly slice your fruit (most fruit will work). We love it with apples, pears, and berries!
  2. Pile the fruit into the middle of a sheet of puff pastry and sprinkle with sugar.
  3. Fold the edges of the pastry in to enclose the edges of the fruit.
  4. Bake your pie at 190c for 30-35 minutes until the pastry is golden brown.
  5. Enjoy as is or with a drizzle of cream and a scoop of ice cream!
