Need
1 capsicum
1 tomato
1 slice of stale bread
1 chilli (optional)
¼ cup almonds (or any nuts you have to use up)
¼ cup of extra virgin olive oil
1 tsp red wine vinegar
salt and pepper to taste
How
- Halve the capsicum, tomato and chilli, placing in the oven to roast at X degrees.
- (Remove skins and) Place roasted vegetables in a blender and add in oil, vinegar, nuts, torn bread and salt and pepper blending until it reaches a thick sauce consistency.
- Enjoy as a sauce for a main or side dish. Justin served his Romesco with fish.
