Justin Narayan’s Stale Bread Romesco Sauce

This stale bread romesco sauce by Justin Narayan is a failproof use it up recipe. It gives leftover bread and vegetables a new life! You can repurpose those ingredients by roasting with capsicum and blending with nuts, olive oil, and vinegar for an amazing romesco. This recipe is incredibly versatile as it allows you to reduce your food waste by using up leftover ingredients. Justin’s tip: This romesco pairs perfectly with fish or chicken, but for a vegetarian option, serve it with whatever veggies you have on hand, for a meal that’s packed with flavour.

Need

1 capsicum
1 tomato
1 slice of stale bread
1 chilli (optional)
¼ cup almonds (or any nuts you have to use up)
¼ cup of extra virgin olive oil
1 tsp red wine vinegar
salt and pepper to taste

How

  1. Halve the capsicum, tomato and chilli, placing in the oven to roast at X degrees.
  2. (Remove skins and) Place roasted vegetables in a blender and add in oil, vinegar, nuts, torn bread and salt and pepper blending until it reaches a thick sauce consistency.
  3. Enjoy as a sauce for a main or side dish. Justin served his Romesco with fish.
  4. Enjoy!
