Leftover Veg and Ham Gnocchi

This leftover veg and ham gnocchi is an easy use it up recipe that transforms leftover roast vegetables and ham into homemade gnocchi in a creamy sauce. It’s perfect for when your fridge is full of Christmas leftovers and you need a clever way to avoid food waste. It’s so easy to mash the vegetables into a soft dough and toss with a cheesy sauce. This is such a simple way to turn Boxing Day leftovers into a flavour-packed meal for the whole family! This recipe is also endlessly flexible, as you can use whatever vegetables and cheese you have lingering in the fridge. So, when you’re facing containers of roast veg and ham that need using, give this leftover veg and ham gnocchi a try!

Need

2 Cups of leftover roast vegetables 

125g Plain flour (or 1/4 of your veg weight) 

Leftover ham, chopped (we used 100g)

Leftover cheese, grated or chopped (we used 100g)

250ml cream 

1 Tbsp butter 

Salt & pepper to taste

Make the gnocchi

1. Mash your leftover roast veg until smooth. Gradually mix in the flour until it forms a soft, slightly sticky dough. 

2.Roll the dough into long “snakes” and cut into bite-sized pieces. 

3.Boil a pot of water and drop in the gnocchi. They’re ready when they float to the top, usually just a few minutes. 

Make the sauce

1.In a pan, melt the butter with the cream, then add your leftover ham and cheese. Stir until the cheese is melted and the sauce is thick and creamy. Season with salt and pepper. 

2.Toss the cooked gnocchi in the sauce and serve immediately.
